Recipe fruit jelly

fruit jelly



ingredients

300 gm fresh blackberries or frozen
185 gm sugar
60 ml lime juice optional
3 tbsp gelatin

method

-place the fruit with any juice, caster sugar, lime juice water in sauce pan
-stir over low heat until the sugar has dissolved
-cover & bring to the boil. reduce the heat & simmer gently for 15 minutes uncover & cool for 10 minutes
-place the fruit in a muslin-line sieve & strain into a bowl without pushing any fruits through. put a little of the juice in a small pan. sprinkle the gelatin in a even layer over the surface. leave to go sponge. then stir over low heat until dissolved. do not boil. combine with the remaining juice
-wet a 1.25 liter jelly mould & pour in the jelly mixture. refrigerator for 4 hour or until set
